Things I love: pancakes, stamps, and craft books

I can hardly believe it’s already November. I’m preparing myself for the busy cold months ahead, and putting extra care into the most important meal of the day: breakfast.

I’m a huge coffee person, so there’s always a fresh pot brewing at my place before I even hop in the shower. But mornings fly by so quickly that I often forget to eat until lunchtime hits. But it really makes a difference to wake up a bit earlier, put on some morning jams, and start the day with a hearty home cooked meal.

Here’s my favorite pancake recipe. It’s easy and super fluffy (see how thick they are?):

Fluffy Banana Pancake Recipe
adapted from “good old fashioned pancakes”

Ingredients:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 egg
3 tablespoons butter, melted
1 1/2 cups milk
1 teaspoon vanilla extract
1 1/2 cups sliced bananas

Directions
1. In a large bowl, sift together flour, salt, baking powder, and sugar.
2. In a smaller bowl, beat together egg and melted butter. Continue to blend as you add milk and vanilla extract.
3. Combine the dry and the wet mixtures together until just blended.
4. Lightly butter a heated pan, scoop about half a cup of batter onto it, and place a couple banana slices on top. Brown each side before serving hot.

*Make sure to take out the egg and milk out of the fridge ahead of time, so that they’re at room temperature.


Taurin and I threw a small Tex-Mex dinner party recently. We prepared Mexican rice, chicken fajitas, refried beans, spicy salsa, beef filling, potatoes, and flour tortilla. It was our friends’ first time trying Mexican food, and they really enjoyed making tacos.


For breakfast the next day: Mexican rice topped with an egg, bacon, and a dollop of sriracha (My friend Zeolite brought us a huge bottle of it all the way from Virginia).


Korean bibimguksu: Chilled noodles smothered in gochujang + sesame sauce (add a splash of vinegar and a bit of honey) with julienned cucumbers, topped with a soft-boiled egg and toasted sesame seeds.

P.S. I just found out I won the Memi the Rainbow giveaway for her hand-stamped fabric buttons. I’m so excited! It’s just timed perfectly, because I just ordered this lovely Japanese dress pattern book from Jannese. I plan on baking lots of pies and sewing cotton dresses this winter when I’m home in Virginia.

    It’s so true that breakfast is the most important meal of the day as good breakfast means a good start of a brand new day. But, I am always too lazy…

    I love pancakes I’ve just found a great recipe for almond meal and besan flour pancakes they are yummy too!!

    Oh there are TOO many things that I like about this post. I am a huge fan of pancakes and those are the thickest that I’ve ever seen, they look delicious! Secondly, there is something amazing about a runny egg on top of rice. So yummy. I’m really craving it now and it’s super late here…1am is too late for more food haha.

    What a lovely post! πŸ˜€ Those pancakes look delicious…. and it’s great that you’re putting in more effort into making breakfast everyday! I wish I had your discipline and determination… and COOKING SKILLS ;p I’d like to be able to prepare healthier breakfasts for myself but in the end I always end up choosing sleep over anything else.

    oh those pancakes look SO good– especially because i think bananas are my very favourite fruit πŸ™‚ we only have a hot cooked breakfast on weekends, when we’re not busy… but i think it’s the yummiest meal of the day x
